why is this necessary to keep employees safe while working in the kitchen

That would be a hair net, gloves and maybe an apron.

They wouldn’t get hair in their food or any other critter that might live in the hair as well as dandruff. The gloves will protect from any kind of contact disease as well as any open cuts the person may have on his/her hands. The apron so that things on your clothes don’t get into the food, or the workstation.

    Apron for hot grease splashes. Covered shoes, no open toed and long sleeved shirts.
